Kuzhipaniyaram


Kuzhipaniyaram(Salt/Kaaram)


This is a breakfast meal which is quite different from the basic idly/dosa which Southindians have.
Just a break from the normal breakfast menu.

Ingredients:

Dosa Batter- 2cups
Grated carrot-4 tbsp
Steamed Beans(Chopped Finely)-4 tbsp
Salt to taste
Grated Coconut-2 tbsp
Green Chilly(Chopped Finely)- 1

Method:

1.Mix all the ingredients together and rest for half an hour.
2.Heat the Kuzhipaniyaram Chatti for a minute.
3.Drop two drops of oil in each kuzhi.With a spoon drop ,1 1/2 spoonful of batter.
4.Reduce the flame and cook for 15 minutes.
5.Now turn each cooked paniyaram with the help of the fork.
6.Cook on low flame for another 10 minutes.Both the sides should be equally cooked.
7.Serve hot with coconut chutney/tomato chutney.

Sweet Kuzhipaniyaram(Stuffed)

Ingredients:

Dosa Batter- 2cups
Jaggery -100 gms
Grated Coconut-2 tbsp
Cashew(split)-10 to 15

Method:

1.Dissolve the jaggery in hot water until it completely dissolves.Now add this to the dosa batter along with a pinch of cardamom powder,grated coconut.
2.Heat the Kuzhipaniyaram Chatti for a minute.
3.Drop two drops of oil in each kuzhi.With a spoon drop ,1 spoonful of batter.Put one split cashew and then add another half spoonful of batter.
4.Reduce the flame and cook for 15 minutes.
5.Now turn each cooked paniyaram with the help of the fork.
6.Cook on low flame for another 10 minutes.Both the sides should be equally cooked.
7.Tastes excellent with honey.

Coffee Cake with Chocochips(Sans Butter)



This is a yummy cake with smells like coffee and has no butter,so u need not worry when u finish it off .Here you go...

Ingredients:

Flour-2 cups
Sugar-1 1/2 cup
Eggs-3

Oil-1 cup
Baking Soda- 1tsp
Baking Powder-1 1/2 tsp
Vanilla Extract-1/2 tsp
Salt-1/4 tsp
Instant Coffee Powder- 4 tbsp
Coffee Decoction- 1/4 cup
Chocochips-5 tbsp

Method:

1.Sieve flour,Baking Soda,Baking Powder,Salt,Instant Coffee for four to five times.
2.Combine Sugar,eggs,oil ,vanilla extract,coffee decoction.
3.Preheat the oven for 10 mins at 200 deg centigrade.

4.Coat the baking tin with butter and parchment paper.
5.Combine and wet and dry ingredients well.Now combine the chocochips and mix. pour the same into the baking tin.
6.Bake for 45-50 mins at 180 deg centigrade.

Note:After combining the wet and dry ingedients,quickly bake it.Dont leave it to rest.

Ingredients:


Potato- 5 (cut lengthwise into wedges)
Sesame Seeds- 2 tbsp
Dry red chillies-4
Fennel Seeds- 2 tsp

Method:

Dry roast Sesame seeds ,red chillies,fennel seeds.Put it in a mixer and coarsely grind the same.Heat 2 tbsp of oil in a pan and add the potatoes,cook for 5-10 minutes.Add the coarsely ground mixture ,salt and turmeric powder and cook further for another 5 minutes.Add enough water so that the potatoes can be cooked.Cook with closed lid for 15 minutes till water had evaporated and crisp.Yummy....!!!


Chickpea Chakli/Channa Murukku




This is a very tasty deep-fried snack which my mom had tried.Its really so yumm...as they say anything thats fried is delicious...Here you go.

Chickpea Chakli/Channa Muruku

Ingredients:

Kabuli Channa(White)- 1 cup
Rice Flour- 2 cups
Seasame Seeds- 1 Tbsp
Cumin Seeds - 1 Tbsp
Aseofeotida - 1/2 tsp
Salt to taste
Butter/Clarified Butter (Ghee) - 3 Tbsp

Method:

Soak the channa overnight, and pressure cook till very soft.Beat the cooked chickpea in a mixer into a fine paste.Combine the rice flour,sesame seeds,cumin seeds,aserfeotida,salt, butter/ghee and the cooked channa paste.Combine and knead with little water to form a soft dough.
Now take the chakli mould/achi.Heat oil in a kadai.Place enough dough in the mould and press into the oil .Cook on medim heat.Keep frying the same till it reaches a browish color.Store in air-tight container.

Will last a week, but am sure it will be all over before that. :-)

 

Beetroot Rice


Was wondering for a very long time in the morning, what should I be cooking for my hubby's lunch.Then when I open my refrigerator, I happen to see a very lonely beetroot, and thus the invention happened.And I hear it was a great hit at office..people were askin for more.Here you go..

Ingredients:

Beetroot - 1 cup grated
Rice - 1 cup( for 2 persons)
Beans ,carrot,Capsicum(all chopped into cubes)- 1 cup
Onion,Tomatoes - chopped 1 cup
Bayleaf - 1
Cloves-2
Cardamom-2
Cinnamon Stick - 1
Chilly Powder- 1 tsp
Coriander Powder - 2 tsp
Turmeric Powder - 1 tsp
Ginger garlic paste- 1 tsp
Water - 2 1/2 cups
Salt to taste

Method:
  1. Heat oil in a nonstick pan. Add cinnamon, cloves,cardamom and bay leaf. Sauté for half a minute.
  2. Add onions,tomatoes,chopped vegetables and continue to sauté on medium heat for 5 minutes.
  3. Add ginger-garlic paste,turmeric powder,corinader powder,chilly powder. Sauté for five minutes.
  4. Lower the flame and cover the pan with a lid and cook for 10 mins until the vegetables are almost cooked. wash the rice and drain the excess water.
  5. Now add the grated beetroot,2 1/2 cups of water, salt to taste.
  6. When the water starts to boil , now add the rice.Stir ,cover and cook on low flame for 20 mins or till the rice is cooked.

Yummy beetroot rice is ready.Serve hot.
